An earnest Extra Prosecco docg (Dry).

Today we are going to discover in detail the star of the Bepin De Eto winery: the Conegliano Valdobbiadene Prosecco Superior Extra Dry vintage. Behind this important name lies a hidden vine with a very short name, the Glera, a semi-aromatic white berry with particularly golden berries. It is the grape that gives rise to each Prosecco, but as always the difference is made by the ‘terroir’ (land) and man's choices.

First of all the territory, here in San Pietro (St. Peter) of Feletto, home of our winery, have the vineyards extend over a hilly area that face south and are protected to the north by the first Dolomite foothills. The whole docg, UNESCO World Heritage Site, is very small and extends over 97 square kilometers of the upper Treviso area from Valdobbiadene to Conegliano. The other factor that determines the unique characteristics of this Prosecco is the yield per hectare, or the choice of the absolute quality made by the winegrowers of the docg, which go from 215 quintals of yield / hectare of the doc to 135 quintals / hectare of the Conegliano Valdobbiadene docg.

After the harvest, in the first ten days of September, a soft pressing of the grapes leads to the first fermentation which takes place in the absence of the skins in steel tanks at a controlled temperature to help preserve the characteristic of the freshness of the grapes. After a month of aging, the "froth method" is completed, that is a second fermentation, which takes place in pressure-tight steel containers, where the carbon dioxide necessary for the formation of the bubbles characteristics of our Sparkling wine is developed in a completely natural way. It is important to know that during the year there are numerous froths to guarantee our customers the same freshness and integrity of the typical aromas of our Prosecco Extra Dry docg.

 

The Extra Dry is the most classic version of Prosecco, with a sugar residue of 16 grams per liter and an acidity of 5.5 grams per liter, it is a balance made Spumante (Sparkling Wine). At a first visual analysis, our Extra Dry has a pale straw yellow color with green reflections. Impeccable in clarity, and enriched by a minute of incessant fizz. The aroma of a fruity note of apple, pear and peach emerges. A floral note is present with a delicate hint of rose and acacia flower, also with a faint vegetal note that emerges in the end. On the palate it is fresh and gives a sweet and soft note which then leaves room for a more acidic, well-known, ‘limoncina’ (lemon beebrush). It is balanced, light, slender, and it has an excellent drinkability.

 

This Prosecco is very versatile and lends itself well to multiple occasions. Excellent as an aperitif and it combines excellently with fish appetizers, crustaceans and mollusks. Also try it with fresh cheeses, cream desserts and fresh fruit.
